Organic school meal systems – towards a more sustainable nutrition Organic Eprints
Løes, Anne-Kristin; Nölting, Benjamin.
Nutritional and health problems related to life style alarm European governments. The interest in school meals as a lever for change is increasing because young people reside longer in public institutions and their often unsatisfactory eating patterns might be counterbalanced by healthy school food. Organic food contributes to sustainable nutrition, and hence is an interesting starting point for healthier menus and food education. The research project ‘innovative Public Organic food Procurement for Youth’ (iPOPY) studies efficient ways to implement organic food in public serving outlets for young people. The project has four explorative work packages studying policies, supply chains and certification, the young consumers’ perception and learning about...

Promoting Organic Food in Public Catering: A Theory Based Approach to Sustainable Public Catering Systems Organic Eprints
Mikkola, M.; Mikkelsen, B. E..
The paper focuses on public catering as a significant service provider in the modern society and a potential large scale user of organic food. In order to argue for the use of organic food by public catering, the traditional nutrition oriented public catering is reframed and repositioned as sustainable public catering system, responsible in mediating the well-being of both bio-physical environment and individual consumers. The repositioning is based on theory of ecological communication within social systems by Niklas Luhmann. The development towards sustainable public catering systems is examined by analysing Danish and Finnish public catering cases, which make visible the role of economy, law, science, politics and education in contextual networks...

Relocalising the food chain: the role of creative public procurement Organic Eprints
Morgan, Kevin; Morely, Adrian.
The conventional food chain presents a challenge to sustainable development, containing hidden costs such as health bills, environmental damage and economic costs to the rural economy. This report argues for the development of local food chains, which would bring the 'multiple dividend' of healthier diets, local markets for local producers, lower food miles and better understanding between producers and consumers. Barriers to the growth of local food chains include EU procurement regulations and UK local government legislation that prohibit explicit 'buy local' policies, health auditing conventions which neglect the health gains of nutritious food; catering cultures that are biased to a few large firms; tendering procedures that are too complex for...

The ability of organic farming to nourish the Austrian people: an empirical study in the region Mostviertel-Eisenwurzen (A) Organic Eprints
Kratochvil, R.; Kaltenecker, M.; Freyer, B..
A sustainable agricultural and food system is characterized by two qualities: availability of high-quality, healthy food along with the best possible preservation of natural resources. Organic farming is discussed as a solution model for the complementary achievement of both aims. Taking the region Mostviertel-Eisenwurzen (A) as a case study, the present investigation examines the regional self-reliance in food production by means of three scenarios. In the basic scenario, the current land use of the region is set against the present-day food demand of the local population. The organic scenario assumes that the farming method of the region adheres 100% to the guidelines of organic farming. The food produced is set against the current food demand, as in...

Wie ökologischer Landbau die Welt ernähren könnte Organic Eprints
Halberg, Niels.
